Spicy seafood canapé with a hint of mint, perfect for one-handed snacking while sipping a cocktail.
Ingredients:
  • 1 x 227g ctn Phillips Crab Meat Special, drained
  • 1 large fresh red chilli, deseeded, finely chopped
  • 40.00 ml finely shredded fresh mint leaves
  • 2 tsp finely grated lime rind
  • 42.00 gm fresh lime juice
  • 2 witlof, leaves separated
Instructions:
  • In a medium bowl, mix together the crab meat, spicy chili, fresh mint, lime zest, and lime juice. Season generously with freshly ground pepper.
  • Divide the crab mixture evenly among the witlof leaves and enjoy with a refreshing Lychee & Mint Fizz (refer to related recipe).
