Sweet chilli and crabmeat rice-paper rolls

Indulge in savory crab and sweet chilli cream cheese rice paper rolls.
Ingredients:
  • 8 round (21cm-diameter) rice-paper sheets
  • 160g sweet chilli light cream cheese (Kraft Philadelphia brand)
  • 1 x 170g can crabmeat, drained
  • 1 celery stick, trimmed, halved crossways, thinly sliced
  • 82.50 ml loosely packed fresh coriander leaves
  • Soy sauce, to serve
Instructions:
  • Submerge a rice-paper sheet in warm water for 10 seconds until softened. Pat dry on paper towel and place on a clean work surface.
  • Spread a layer of cream cheese down the center of each rice-paper sheet. Add 2 teaspoons of crabmeat, celery, and coriander on top. Roll up tightly to enclose the filling, and repeat with the remaining ingredients.
  • Arrange the rice-paper rolls on a platter, sprinkle with the remaining coriander, and serve alongside soy sauce.
