Crab and cucumber canapes

Refreshing cucumber and delicate crab canapes with a satisfying crunch.
Ingredients:
  • Vegetable oil, to shallow fry
  • 10 wonton wrappers, quartered
  • 200g fresh crab meat
  • 1 Lebanese cucumber, seeded, very finely chopped
  • 40.40 gm coconut cream
  • 10.60 gm lime juice
  • 12.20 gm fish sauce
  • 8.00 gm brown sugar
  • Baby herbs, to garnish
Instructions:
  • In a medium frying pan, heat oil to a depth of 1cm over medium heat. Fry 4 wonton pieces until golden and crisp, for 1-2 minutes. Drain on paper towel-lined plate and repeat with remaining wrappers in batches.
  • In a small bowl, mix together the crab, cucumber, makrut lime leaves, coconut cream, lime juice, fish sauce, and sugar until well combined.
  • Evenly distribute the flavorful crab mixture onto the wontons, then garnish with fresh baby herbs. Arrange them on a serving platter and serve promptly to enjoy the delicious flavors.
