Crab Salad Panini

Grilled zesty crab salad panini on sourdough bread.
Ingredients:
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onion
  • 1/4 cup mayonnaise
  • 4 teaspoons lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 to 1/2 teaspoon Tabasco sauce
  • 14 to 16 oz fresh lump crab meat
  • 8 slices sourdough bread
  • 4 Tbsp butter, room temperature
Instructions:
  • In a large bowl, combine parsley, green onion, mayonnaise, lemon zest, lemon juice, Worcestershire sauce, black pepper, and Tabasco sauce. Mix well. Carefully add the crabmeat, being careful not to break up the chunks.
  • Preheat the panini grill. Spread butter on two bread slices for flavor. Flip one slice over and add a quarter of the crab mixture. Top with the other bread slice, buttered side facing up.
  • Grill two panini at once with the lid down until bread is toasted, about 4 to 5 minutes.
