Delicious baked flounder stuffed with crabmeat, mustard, and crackers, topped with mayo, parsley, and paprika.
Ingredients:
  • 1.5 pounds flounder fillets
  • 1 cup crabmeat - drained, flaked and cartilage removed
  • 3 crushed saltine crackers
  • 1 tablespoon finely chopped green bell pepper
  • 0.25 teaspoon ground dry mustard
  • 0.25 teaspoon Worcestershire sauce
  • 0.25 teaspoon salt
  • ground white pepper to taste
  • 1 egg white
  • 1 tablespoon mayonnaise
  • 0.25 cup butter, melted
  • 1 egg yolk
  • 5 tablespoons mayonnaise
  • 1 tablespoon dried parsley
  • 0.5 teaspoon paprika
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C). Wash the flounder fillets, then gently dry them with paper towels. Grease a shallow baking dish lightly.
  • Mix together the crabmeat, crushed saltines, bell pepper, mustard, Worcestershire sauce, salt, and white pepper in a medium bowl. In a small bowl, combine the egg white and 1 tablespoon of mayonnaise, then stir this into the crabmeat mixture.
  • Coat fillets with rich melted butter, then nestle them in the baking dish. Top with a generous amount of crabmeat mixture and finish with a luxurious drizzle of any leftover butter.
  • Cook in the oven, already warmed up, for 15 minutes.
  • Prepare the topping by gently whisking an egg yolk in a small bowl, then mix in 5 tablespoons of mayonnaise. Once the fish is out of the oven, spread this creamy mixture over the stuffing, and top with a sprinkle of fresh parsley and paprika.
  • Preheat oven to 450 degrees F (230 degrees C and bake until golden and bubbly, about 5-6 minutes.
