Craisin and almond pilaf

Sweet craisins and crunchy almonds elevate this low-calorie rice side dish.
Ingredients:
  • 25g (1/4 cup) flaked almonds
  • 500ml (2 cups) chicken style liquid stock
  • 200g (1 cup) Basmati rice
  • 75g (1/2 cup) craisins (Ocean Spray brand)
  • 25g baby spinach leaves
  • Marinated chicken skewers (see recipe), to serve
Instructions:
  • In a small frying pan over medium heat, toast the almonds by stirring occasionally for about 2 minutes until they are lightly golden.
  • In a saucepan over high heat, bring the stock to a boil. Stir in the rice and simmer on low, covered, for 12-15 minutes until absorbed and tender. Remove from heat, mix in the craisins, cover, and let sit for 5 minutes. Finally, add the spinach and gently toss until combined. Enjoy!
  • Serve the pilaf on plates, add the marinated chicken skewers on top, and finish with a sprinkle of toasted almonds.
