Homemade kuchen with nut filling and cranberry-apple topping.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1/3 cup granulated sugar
  • 3/4 teaspoon baking powder
  • 1/2 cup cold unsalted butter, cubed
  • 1 egg
  • 2 teaspoons water
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans
  • 1/2 cup granulated sugar
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon orange peel
  • 1 tablespoon unsalted butter, softened
  • 1 can (14 oz) whole berry cranberry sauce
  • 1 tablespoon orange juice
  • 2 large apples, peeled and cored
  • Powdered sugar
Instructions:
  • Butter a 9-inch cake pan or springform pan to ensure a smooth release of your baked creation.
  • Combine 1 1/2 cups flour, 1/3 cup granulated sugar, and baking powder in a large bowl. Add cold cubed butter and use a pastry blender or 2 knives to mix until a coarse crumbly mixture forms.
  • In a small bowl, whisk together 1 egg, water, and vanilla until well combined. Pour the mixture over the flour mixture and gently stir until just moistened; the mixture will appear dry. Knead the mixture until the flour is fully incorporated and a smooth dough forms. Press the dough into the bottom and 1 1/2 inches up the sides of the pan. Chill in the refrigerator for 15 minutes.
  • In a food processor with a steel blade attachment, combine pecans, 1/2 cup granulated sugar, 3 tablespoons flour, and orange peel. Process until nuts are finely ground. Add egg and softened butter, then blend until smooth. Spread the mixture over the chilled crust.
  • Preheat the oven to 350°F.
  • Combine cranberry sauce and orange juice in a medium bowl until smooth. Spread over nut mixture, leaving a 1-inch border.
  • Quarter the apples and place them core side down on a cutting board. Make thin lengthwise slits in each quarter without cutting through the core side. Arrange the apple quarters around the edge of the dough crust so they are touching. Bake for about 1 hour until the crust is lightly browned. Let it cool for 10 minutes, then sprinkle with powdered sugar before serving. Store covered in the refrigerator.
