Deliciously addictive cookies with tart cranberries, creamy white chocolate, and sweet oranges.
Ingredients:
  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • Grated zest of 1 orange
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen (unthawed) cranberries, coarsely chopped or left whole
  • 1/2 cup white chocolate chunks or chips
Instructions:
  • Preheat oven to 350°F and prepare cookie sheets with nonstick cooking spray or parchment paper. In a large bowl, cream together butter, sugar, brown sugar, and orange zest until well blended. The mixture should resemble wet sand. Mix in the egg and vanilla until smooth.
  • Mix the flour, baking powder, baking soda, and salt in a small bowl. Combine with the sugar mixture, stirring by hand until almost mixed. Fold in the cranberries and white chocolate until just blended.
  • Spoon dough onto cookie sheets, leaving 1-inch space between each. Bake for 12-14 minutes until lightly golden with set edges but a soft middle. Allow to cool on the sheet for 1-2 minutes, then transfer to a wire rack.
