Indulgent cranberry-orange bars loaded with white chocolate chips, dried cranberries, and zesty orange flavor.
Ingredients:
  • 1 cup unsalted butter, at room temperature
  • 1 cup brown sugar
  • 0.33333334326744 cup white sugar
  • 3 large eggs
  • 1 teaspoon orange extract
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 cup sweetened dried cranberries (such as Craisins®)
  • 0.5 cup white chocolate chips
  • 0.5 (8 ounce) package cream cheese, softened
  • 0.25 cup unsalted butter, softened
  • 0.5 cup sweetened dried cranberries (such as Craisins®), chopped
  • 1 tablespoon grated orange zest, or more to taste
  • 0.33333334326744 cup white chocolate chips
  • 0.5 teaspoon canola oil
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 9x13-inch baking dish with parchment paper.
  • Using an electric mixer, whip up a blend of butter, brown sugar, and white sugar until creamy for about 5 minutes. Integrate eggs, orange extract, and vanilla extract until smoothly combined. Combine flour, baking powder, and ginger until fully mixed, resembling soft cookie dough. Add in cranberries and white chocolate chips and mix well. Transfer the thick batter into the prepared pan.
  • Bake in the preheated oven for 30-35 minutes until lightly browned and a toothpick inserted into the center comes out clean. Avoid overbaking to keep the bars moist. Allow them to cool completely for about 30 minutes before serving.
  • Combine cream cheese and butter until they are light and fluffy. Mix in confectioners' sugar and orange extract until the frosting is fluffy and spreadable. Evenly spread the frosting over the cooled bars.
  • Pulse cranberries and orange zest in a food processor until roughly chopped. Sprinkle the mixture evenly over the frosted bars.
  • Combine white chocolate chips and oil in a microwave-safe glass measuring cup. Microwave for 1-1 minute 15 seconds, stirring every 15 seconds until smooth. Drizzle the melted chocolate diagonally over the bars using a fork or whisk.
  • Chill the chocolate for a minimum of 1 hour before slicing into squares or triangles.
