Cranberry and macadamia swirls

Prep and freeze these delicious treats in advance for easy entertaining all holiday season.
Ingredients:
  • 200g butter
  • 100g (1/2 cup) caster sugar
  • 4.40 gm vanilla essence
  • 1 egg
  • 225g (1 1/2 cups) plain flour, sifted
  • 105g (3/4 cup) cornflour, sifted
  • 410g jar fruit mince
  • 50g (1/3 cup) dried cranberries, coarsely chopped
  • 60g (1/3 cup) macadamias, finely chopped
  • 150g white chocolate, melted
Instructions:
  • In a large bowl, cream the butter using an electric beater until creamy. Mix in the sugar until light and pale. Incorporate the vanilla and egg, then add the flour. Use a round-bladed knife to cut and mix until the dough begins to form.
  • Place the dough on a lightly floured surface and gently knead until smooth. Wrap in non-stick baking paper and chill in the fridge for 10 minutes. Roll out into a 5mm-thick, 36 x 28cm rectangle on a large sheet of lightly floured non-stick baking paper. Spread with fruit mince, leaving edges clear. Sprinkle with cranberries and macadamia nuts. Roll up tightly from the long side closest to you using the paper as a guide to form a log.
  • Preheat oven to 180ºC. Line 2 baking trays with non-stick baking paper. Slice the log into 1cm-thick rounds. Place biscuits on trays and bake for 10-15 minutes until lightly golden. Cool completely on trays.
  • Drizzle biscuits with luscious chocolate and let it set.
