Delicious apple cranberry stuffing muffins - a must-have for your holiday meal!
Ingredients:
  • 80g butter
  • 1 large brown onion, finely chopped
  • 175g shortcut bacon rashers, trimmed, finely chopped
  • 1125.00 ml fresh breadcrumbs
  • 62.50 ml finely chopped fresh sage leaves
  • 1 medium granny smith apple, cored, finely chopped
  • 125.00 ml dried cranberries
  • 82.50 ml finely chopped macadamia nuts
  • 1 egg, lightly beaten
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • In a frying pan over medium heat, melt butter. Add in onion and bacon, stirring occasionally for 10 minutes or until onions have softened.
  • After cooling for 5 minutes in a heatproof bowl, combine the onion mixture with breadcrumbs, sage, apple, cranberries, macadamia nuts, and egg.
  • Prepare a 12-hole muffin pan by greasing it. Firmly press 1/3 cup of stuffing into each hole. Bake for 25 minutes or until golden and firm. Allow them to stand in the pan for 5 minutes before serving.
