White chocolate, cranberry and macadamia jumbo cookies

Irresistible jumbo cookies with white chocolate, cranberries, and macadamia nuts.
Ingredients:
  • 250g butter, softened
  • 322.50 gm raw caster sugar
  • 6.60 gm vanilla extract
  • 525.00 gm self-raising flour
  • 95.00 gm white chocolate bits
  • 125.00 ml dried cranberries
  • 125.00 ml chopped macadamia nuts
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced, then line 2 large baking trays with baking paper.
  • With an electric mixer, whip together butter, sugar, and vanilla until light and fluffy. Gradually add eggs one at a time, mixing well after each addition.
  • Sprinkle flour over the creamy butter mix. Mix in chocolate bits, cranberries, and macadamias. Stir until well combined. Roll into 10 balls using 1/2 cup per ball. Space 2 balls 5cm apart on each tray. Flatten them with your palm into 1cm-thick rounds.
  • Bake for 18 to 20 minutes, swapping trays halfway through cooking, until golden. Allow to cool on trays for 5 minutes, then transfer to a wire rack to cool completely. Repeat with remaining mixture to yield 10 cookies.
