Decadent cookies packed with vanilla chips, macadamia nuts, and cranberries. Enjoy as drop cookies or slice-and-bake after refrigerating or freezing.
Ingredients:
  • 3 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.75 teaspoon salt
  • 0.75 cup white sugar
  • 1 cup packed light brown sugar
  • 1 cup butter, softened
  • 2 eggs, slightly beaten
  • 1 cup vanilla baking chips
  • 1 cup chopped macadamia nuts
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Mix together flour, baking soda, and salt in a medium bowl; set aside. Cream together white sugar, light brown sugar, and butter (avoid using shortening). Add in slightly beaten eggs and vanilla; stir until combined.
  • Gently incorporate flour mixture until just combined, then fold in vanilla chips, macadamia nuts, and dried cranberries.
  • Spoon small amounts of dough onto an ungreased baking sheet. Bake in a preheated oven until cookies are just set, approximately 10 minutes. Allow to cool - cookies will settle slightly.
  • Optional Twists: For rich chocolate cookies, swap out 1/2 cup flour for 1/2 cup cocoa powder. For refrigerator cookies: Shape dough into 2 logs, wrap in plastic, and refrigerate or freeze. If freezing, thaw for at least 30 minutes before slicing. Cut 1-inch slices, then quarter and arrange on baking sheet pointed side up. To elevate presentation, drizzle white chocolate over chocolate cookies and dark chocolate over vanilla cookies. Indulge in these gourmet treats!
