Cranberry and orange balls

Try these portable gluten-free cranberry orange energy balls for a quick snack on the go.
Ingredients:
  • 12 medjool dates, pitted
  • 28.60 gm honey
  • 2 tsp finely grated orange rind
  • 125.00 ml cashew spread
  • 125.00 ml LSA (linseed, sunflower seeds and almonds)
  • 16.25 gm shredded coconut
  • 62.50 ml dried cranberries
  • 187.50 ml pistachio kernels, toasted
Instructions:
  • Combine dates, honey, orange rind, cashew spread, LSA, coconut, cranberries, and 1/4 cup pistachios in a food processor. Pulse until mixture is thoroughly blended and coarse in texture.
  • Finely chop the rest of the pistachios and transfer them to a small bowl.
  • Shape level tablespoons of the mixture into balls, gently coat with pistachios, and place on a plate. Chill for 20 minutes until firm. Serve as desired (see notes).
