Apple cranberry muffins - perfect for cozy mornings.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 Granny Smith apple, cored and chopped
  • 0.33333334326744 (12 ounce) package fresh cranberries, diced - or more to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while preparing 12 muffin cups by greasing them or lining with paper liners.
  • In a bowl, combine flour, baking soda, cinnamon, salt, and brown sugar. In a separate bowl, mix vegetable oil, eggs, and vanilla extract. Combine the egg mixture with the flour mixture to create a batter; gently fold in apple and cranberries. Transfer the batter into prepared muffin cups.
  • Bake until muffins are golden on top and a toothpick inserted into the center comes out clean, about 18 to 22 minutes.
