Cranberry Apple Dumplings with Crimson Sauce

Impress your guests with apple and cranberry pastry dumplings, a crowd-pleasing dessert.
Ingredients:
  • 1 can (16 ounces) whole berry cranberry sauce
  • 1/4 cup orange juice or water
  • 2 tablespoons red cinnamon candies
  • 1 cup plus 1 tablespoon shortening
  • 3 cups Gold Medal™ all-purpose flour
  • 3/4 teaspoon salt
  • 6 to 7 tablespoons cold water
  • 4 small cooking apples (each about 3 inches in diameter), peeled and cored
  • 4 teaspoons sugar
  • 1 egg, slightly beaten
  • Additional sugar, if desired
  • Fresh mint leaves, if desired
Instructions:
  • Preheat the oven to 400°F. Lightly grease the bottom of a 15 1/2x10 1/2x1 inch jelly roll pan or large cookie sheet with shortening. In a 1-quart saucepan, warm cranberry sauce, orange juice, and candies over medium heat, stirring occasionally until the mixture is hot and the candies are melted; then, remove from heat.
  • Cut shortening into flour and salt until mixture resembles small peas. Add cold water one tablespoon at a time, tossing with a fork until dough comes together. Roll out dough into an 18x16 inch rectangle. Cut into four 8-inch squares and use remaining dough to cut out decorative leaves.
  • Place an apple on each pastry square. Fill the center of each apple with 1 tablespoon of cranberry sauce mixture and sprinkle each apple with 1 teaspoon of sugar. Moisten the corners of the pastry squares. Fold 2 opposite corners of pastry over the apple and pinch to seal. Repeat with the remaining corners and pinch the edges of the pastry to seal. Decorate with pastry leaves, then transfer the dumplings to a pan. Brush with egg wash and sprinkle with extra sugar.
  • Bake for around 30 minutes, until the crust turns a beautiful golden brown and the apples are tender. Garnish each dumpling with a fresh mint leaf, then serve warm with the remaining sauce mixture.
