Cranberry Chocolate Orange Muffins

Plump cranberries soaked in water, added to muffin batter with orange zest and chocolate chips.
Ingredients:
  • 1 cup dried cranberries
  • 1 tablespoon grated orange zest
  • 1 cup boiling water
  • 0.5 cup brown sugar
  • 0.25 cup vegetable oil
  • 1 egg
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • In a bowl, combine cranberries, orange zest, and baking soda. Pour hot water over the mixture and allow it to sit at room temperature for 5 minutes.
  • Combine the brown sugar, oil, egg, and vanilla extract in a bowl. Mix in the cranberry mixture thoroughly.
  • Combine flour and baking powder in a separate bowl, then gently mix into the cranberry mixture until just combined. Next, fold in chocolate chips with care and evenly distribute the batter into the prepared tin.
  • Bake in the oven until tops are golden brown and spring back when touched, about 20-25 minutes.
