Orange cranberry quick bread with decadent chocolate icing elevates the flavors to new heights.
Ingredients:
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup coarsely chopped sweetened dried cranberries
  • 3/4 cup half-and-half
  • 2 teaspoons grated orange peel
  • 1/4 cup orange juice
  • 1 oz. white chocolate baking bar, chopped
  • 1 to 2 tablespoons half-and-half
  • 1/2 cup powdered sugar
Instructions:
  • Preheat the oven to 350°F. Grease the bottom of an 8x4-inch loaf pan. In a large bowl, thoroughly mix together flour, sugar, baking powder, baking soda, and salt. Gently fold in the cranberries.
  • Combine 3/4 cup half-and-half, orange peel, and eggs in a small bowl; beat until smooth. Mix in melted butter, orange juice, and the half-and-half mixture into the flour mixture until just combined. Pour batter into a greased pan.
  • Bake at 350°F for 50-60 minutes until deep golden brown and a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then loosen the edges with a knife, remove the loaf from the pan and place it on a wire rack. Let it cool completely for about 1 hour.
  • In a small microwave-safe bowl, mix baking bar and 1 tablespoon of half-and-half. Microwave on HIGH for 30 seconds, then stir until melted and smooth. If needed, microwave for another 10-20 seconds. Whisk in powdered sugar until smooth. Add more half-and-half, 1/2 teaspoon at a time, until you reach your desired consistency. Spread the icing over the cooled loaf, letting some drip down the sides.
