Cranberry Chocolate Skillet Cookie

Indulge in decadent cranberry chocolate skillet cookies, perfect with a side of ice cream.
Ingredients:
  • 3/4 cup butter or margarine, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3/4 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup sweetened dried cranberries or dried cherries
  • 8 oz semisweet baking chocolate, chopped
  • Vanilla ice cream, if desired
  • Hot fudge topping, if desired
Instructions:
  • Preheat the oven to 350°F. Grease a 10-inch ovenproof skillet generously with shortening. In a large bowl, use an electric mixer to beat butter, brown sugar, and granulated sugar until light and fluffy for about 2 minutes. Mix in the egg and vanilla. Gradually blend in the flour, baking soda, and salt on low speed until combined. Gently fold in oats, cranberries, and chocolate. Press the dough into the bottom of the skillet.
  • Bake for 40 to 45 minutes until golden and set. Let cool on a rack for 20 minutes, then cut into 10 wedges. Enjoy warm or chilled with a scoop of ice cream and drizzled with hot fudge.
