Cranberry Hummus

Festive cranberry hummus - ideal make-ahead holiday appetizer.
Ingredients:
  • 1 (15 ounce) can cannellini beans
  • 0.5 cup chopped dried cranberries
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon chopped fresh thyme
  • 0.25 teaspoon ground cinnamon
  • 1 clove garlic, crushed
  • 3 tablespoons chopped pecans
  • salt to taste
Instructions:
  • Separate cannellini beans from their liquid, keeping the liquid aside.
  • In a food processor, blend cannellini beans, cranberries, olive oil, lemon juice, thyme, cinnamon, and garlic until smooth. Adjust the consistency by adding some of the reserved bean liquid if needed.
  • Mix in chopped pecans and season to perfection with salt. Keep in the fridge in a sealed container until it's time to enjoy.
  • Top the dish with extra cranberries, pecans, and a touch of olive oil for extra flavor, if desired.
