Tangy cranberry Jell-O salad with mandarin oranges, fresh cranberries, and crunchy pecans for a flavorful, fruity, and nutty twist.
Ingredients:
  • 2 cups fresh cranberries
  • 1 (15 ounce) can mandarin oranges, drained and chopped
  • 1 cup pecans
  • 1 (15 ounce) can crushed pineapple, drained
  • 2 (3 ounce) packages cranberry-flavored gelatin mix (such as Jell-O®)
  • 0.75 cup white sugar
  • 1 cup boiling water
  • 1 cup cold water
Instructions:
  • Combine cranberries, mandarin oranges, and pecans in a food processor and pulse until finely ground, approximately 30 seconds. Transfer the mixture to a large bowl.
  • Combine the pineapple, gelatin, and sugar in a bowl. Pour in boiling water and cold water, then mix well until the gelatin and sugar are fully dissolved.
  • Combine gelatin mixture with cranberry mixture; stir well. Transfer the mixture into a gelatin mold and refrigerate for at least 8 hours or overnight before serving.
