Cranberry Pancakes

Elevate your brunch with a delicious twist - use leftover cranberry sauce as a flavorful alternative to maple syrup.
Ingredients:
  • 1 cup canned whole berry cranberry sauce
  • 2/3 cup water
  • 1/4 cup sugar
  • 2 1/2 cups Original Bisquick™ mix
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 eggs, lightly beaten
  • 1 1/4 cups milk
  • 1/2 cup canned whole berry cranberry sauce
  • 1 teaspoon vanilla
Instructions:
  • In a 2-quart saucepan, gently heat the Cranberry Sauce ingredients until it comes to a boil; simmer for 5 to 10 minutes until it thickens.
  • Heat a large skillet or griddle over medium-high heat, greasing if needed.
  • Combine Bisquick mix, 2 tablespoons of sugar, cinnamon, nutmeg, and ginger in a large bowl. Stir in the rest of the pancake ingredients.
  • Ladle 1/4 cup of batter onto a sizzling griddle. Cook until bubbles form on top and edges are set. Flip and cook the other side.
  • Top the pancakes with a generous dollop of vibrant cranberry sauce before serving.
