Cranberry sauce

Elevate roast spatchcock with a drizzle of sweet cranberry sauce for intense flavor.
Ingredients:
  • 375ml red wine
  • 220g caster sugar
  • 6 cloves
  • 6 allspice berries*
  • 2 cinnamon sticks
  • 1 strip orange peel
  • 275g jar whole-berry cranberry sauce
  • 300g frozen cranberries, thawed
Instructions:
  • In a saucepan, mix together all ingredients except for the sauce and cranberries. Bring to a boil, stirring to dissolve the sugar. Lower the heat and simmer for 15-20 minutes.
  • Strain the mixture back into the pan, removing any solids. Stir in the cranberry sauce and fresh cranberries, cooking over low heat until the sauce dissolves and simmer for 10 minutes. Transfer to a serving dish and let it cool.
  • Present the spatchcocks alongside the dish.
