Elevate your oat bread with tangy cranberries, crunchy sunflower seeds, and a touch of honey and molasses for a hint of sweetness.
Ingredients:
  • 0.67 cup dried cranberries
  • 2 cups hot water
  • 2 (.25 ounce) packages active dry yeast
  • 0.25 cup honey
  • 0.25 cup molasses
  • 1 cup warm water (110 degrees F)
  • 1 cup rolled oats
  • 2 eggs, beaten
  • 2 teaspoons salt
  • 0.33 cup shortening
  • 6 cups bread flour
  • 0.33 cup roasted sunflower seeds
Instructions:
  • Soak cranberries in hot water in a small bowl. In another bowl, combine yeast, honey, and molasses in 1 cup of warm water. Allow to sit for about ten minutes until creamy. Drain and chop the cranberries, saving the liquid for later use; set aside.
  • Combine oats, eggs, salt, shortening, and 2 cups of flour in a large bowl. Mix well. Stir in the yeast mixture. Gradually add remaining flour, 1/2 cup at a time, until dough comes together. Mix in cranberries and sunflower seeds.
  • Turn the dough out onto a lightly floured surface and knead until smooth and elastic for about 8 minutes. Then, place the dough in a lightly oiled large bowl, turning it to coat with oil. Cover with a damp cloth and let it rise in a warm place until doubled in volume, roughly 45 minutes.
  • Begin by greasing two 9x5 inch loaf pans. Then, gently deflate the dough and transfer it to a lightly floured surface. Divide the dough into two equal portions and shape them into loaves before placing them in the pans. Alternatively, shape the dough into longer loaves and set them on lightly greased baking sheets. Cover with a damp cloth and allow to rise until doubled in size, approximately 40 minutes. In the meantime, preheat the oven to 450 degrees F (230 degrees C).
  • First, bake in a preheated oven for 10 minutes. Then reduce the heat to 325°F (165°C) and bake for another 30 minutes. Allow to cool for a few minutes before removing from pans. Optionally, brush with butter or margarine. For best taste, enjoy slightly warm or at room temperature. Avoid cutting too quickly.
