Cranberry-Apple Pie Squares

Create a decadent holiday pie merging two beloved fruits, topped with rich caramel and ice cream.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 tablespoon sugar
  • 1/2 cup butter or margarine
  • 1 egg yolk
  • 1/4 cup milk
  • 8 1/2 cups thinly sliced, peeled baking apples (3 lb.; about 9 medium)
  • 1 cup sugar
  • 1/4 cup Gold Medal™ all-purpose flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped fresh or frozen cranberries, thawed
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 1 cup caramel ice cream topping, heated
  • Vanilla or cinnamon ice cream, if desired
Instructions:
  • Preheat the oven to 375°F. Mix 1 1/2 cups flour, sugar, and 1/4 teaspoon salt in a large bowl until well combined. Use a pastry blender to cut in 1/2 cup butter until the mixture resembles coarse crumbs.
  • Mix together a rich egg yolk and creamy milk in a small bowl until smooth. Incorporate this mixture into the flour blend, stirring only until all dry ingredients are coated.
  • Roll the dough into a 15x11-inch rectangle on a lightly floured surface, then transfer it to a 13x9-inch ungreased pan and press it into the bottom and 1 inch up the sides of the pan.
  • In a large microwave-safe bowl, microwave the apples on HIGH for 6 to 8 minutes, stirring every 2 minutes, until they are fork-tender. Then, mix in 1 cup of sugar, 1/4 cup of flour, cinnamon, and 1/2 teaspoon of salt until well combined. Spoon the apple mixture over the crust and sprinkle with cranberries.
  • Combine 1 cup of flour, brown sugar, and 1/2 cup of butter in a medium bowl. Mix until crumbly, then sprinkle over the fruit.
  • Bake at 375°F until topping is deep golden brown, apples are tender, and filling is bubbly, for 45-60 minutes. Allow to cool for 1 hour before serving.
  • Cut the warm dessert into squares, place on dessert plates, and generously top each with caramel sauce and a scoop of ice cream.
