Cranberry-Chipotle Ham

Try this festive cranberry-chipotle glazed baked ham for a tasty Christmas dinner.
Ingredients:
  • 1 cooked smoked bone-in ham (10 to 12 lb)
  • 1 cup whole berry cranberry sauce
  • 3 tablespoons packed light brown sugar
  • 2 tablespoons spicy brown mustard
  • 1 to 2 chipotle chiles in adobo sauce (from 7-oz can), finely chopped
  • 1/4 teaspoon chipotle chile pepper powder
  • Fresh cranberries, if desired
  • Fresh rosemary sprigs, if desired
  • Orange wedges, if desired
Instructions:
  • Preheat the oven to 325°F and place the oven rack on the lowest position. Line a roasting pan with foil.
  • Peel off the ham skin and trim the fat to 1/4-inch thickness, then score the fat in a diamond pattern at 1-inch intervals. Transfer the ham to a pan.
  • Combine cranberry sauce, brown sugar, mustard, chiles, and chile pepper powder in a bowl. Brush the mixture onto the ham. Place an ovenproof meat thermometer in the thickest part of the meat, ensuring it doesn't touch the bone or fat.
  • Roast in the oven for 1.5 to 2 hours, basting with pan juices every 30 minutes, until the thermometer reads at least 140°F. Tent loosely with foil and rest for 10 to 15 minutes before carving. Serve garnished with cranberries, rosemary, and oranges.
