Delicious oatmeal cookie bars with tangy cranberry-pomegranate filling.
Ingredients:
  • 1/2 cup butter, softened
  • 1 tablespoon water
  • 1 egg
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/3 cup packed dark brown sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon grated lemon peel
  • 1 1/2 cups fresh cranberries, chopped
  • 1/4 cup pomegranate-cranberry juice
  • 2 tablespoons butter, melted, cooled
Instructions:
  • Preheat oven to 350°F. Grease a 9-inch square pan with butter and line the bottom with parchment paper or foil.
  • In a medium bowl, blend softened butter, water, and egg until smooth. Add the cookie mix and mix thoroughly. Set aside 1 1/2 cups of dough for topping. Press the remaining dough into the bottom of the pan using your hands or a wooden spoon, ensuring it touches the sides of the pan.
  • In a separate mixing bowl, combine brown sugar, flour, cinnamon, and lemon zest until well mixed. Add cranberries, cranberry-pomegranate juice, and melted butter; gently stir until cranberries are fully coated.
  • Evenly distribute the filling over the base, then evenly crumble the reserved cookie dough on top of the filling.
  • Bake for 35 to 45 minutes until the top is golden brown and the filling is bubbly. Allow to cool completely for about 1 hour. Cut into squares or bars and serve topped with whipped cream, if desired.
