Sweet and tangy sorghum-mustard glazed ham baked over coffee for rich flavor.
Ingredients:
  • 2 pounds boneless picnic ham, or more to taste
  • sea salt to taste
  • 0.5 cup brown sugar
  • 0.25 cup sorghum syrup
  • 2 tablespoons brown mustard
  • 1 tablespoon brandy
  • 1 tablespoon dry mustard
  • 24 whole cloves
  • 2 cups brewed coffee, or as needed
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Position the ham with the fat side facing up on a rack inside a roasting pan. Score the fat in a crisscross pattern and season generously with sea salt.
  • Combine the brown sugar, sorghum syrup, brown mustard, brandy, dry mustard, cinnamon, nutmeg, and ginger in a bowl to make the basting mixture. Brush a third of the mixture onto the ham and insert cloves into the fat. Pour coffee into the bottom of the roasting pan.
  • Roast the ham in the oven, applying the basting mixture every half hour, until it reaches 165 degrees F (74 degrees C) at the center, approximately 2 hours.
