Crazy Yummy Cranberry Pecan Cookies with Orange Glaze

Festive cookies with cranberries, pecans, oats, and zesty orange glaze.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup butter
  • 0.75 cup white sugar
  • 0.75 cup brown sugar, packed
  • 2 eggs
  • 1 cup chopped pecans
  • 1 cup rolled oats
  • 1 cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
  • 1.5 cups confectioners' sugar
  • 0.5 cup freshly squeezed orange juice
  • 1 orange, zested
  • 1 tablespoon butter
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C), then sift together the flour, baking soda, and salt in a bowl.
  • In a large bowl, cream together butter, white and brown sugars, and vanilla extract with an electric mixer until creamy. Add eggs one at a time, then mix in flour until a soft dough forms. Fold in pecans, oats, and cranberries, and spoon heaping portions onto ungreased baking sheets.
  • Bake in a preheated oven for 10 to 12 minutes until the cookies are set with slightly brown edges. Allow the cookies to cool on baking sheets for 1 minute before transferring to wire racks to finish cooling. Glaze the cookies while they are still warm.
  • Combine confectioners' sugar and orange juice in a microwave-safe bowl and mix until sugar is dissolved. Add orange zest and butter, then microwave on medium power for about 30 seconds until butter melts and mixture is warm. Stir the glaze until smooth, then drizzle over cookies.
