Cream cake topped with fresh strawberries and passionfruit for a delectable dessert.
Ingredients:
  • 300ml thickened cream
  • 250g caster sugar
  • 4.40 gm vanilla extract
  • Zest and juice of 1 lemon
  • 300g self-raising flour
  • 3 eggwhites
  • Zest and juice of 1 orange
  • 60ml lemon juice
  • 400g strawberries, quartered lengthways
  • 3-4 passionfruit, pulped
  • 42.00 gm orange juice
  • 24.00 gm pure icing sugar
Instructions:
  • Preheat your oven to 180°C. Lightly grease and line the base of a 24cm springform pan. In an electric mixer, whip together cream, 175g sugar, and vanilla until soft peaks form. Gently fold in the rind and flour. Whip the egg whites until soft peaks form, then fold a portion into the mixture.
  • Gently incorporate the rest of the beaten egg white. Transfer the mixture to the pan and bake for 50 minutes.
  • Mix all the ingredients in a bowl and let them sit for 1 hour to create a delicious strawberry topping.
  • Allow the cake to cool slightly before flipping it onto a wire rack set over a tray.
  • In a saucepan over low heat, gently simmer orange juice, orange zest, lemon juice, and sugar for 2-3 minutes. Drizzle this flavorful syrup over the warm cake and garnish with strawberry topping. Enjoy!
