Whip up a luxurious thyme and asparagus soup for a fancy dinner starter on chilly evenings.
Ingredients:
  • 1 tablespoon olive oil
  • 2 small onions, chopped
  • 0.5 cup chopped mushrooms, or to taste
  • 1 teaspoon minced garlic, or to taste
  • 1 bunch asparagus, trimmed and coarsely chopped
  • 0.33333334326744 cup dry white wine
  • 2 dashes dried thyme, or more to taste
  • 1 dash ground black pepper
  • 3 cups vegetable broth, or more to taste
  • 0.5 cup heavy cream
Instructions:
  • In a saucepan, heat olive oil over medium heat. Sauté onions, mushrooms, and garlic until onions soften, approximately 5 minutes. Stir in asparagus, wine, thyme, and black pepper; cook until asparagus is tender, about 5 minutes. Add 2 cups of broth and simmer until flavors meld, 5 to 10 minutes.
  • Blend soup until velvety smooth with an immersion blender, then gently mix in the cream. Adjust consistency by adding more stock as needed and simmer for 5 to 10 minutes until perfectly heated through.
