Indulgent cheesy creamed kale with crispy Parmesan-panko topping, a delicious accompaniment to your festive prime rib.
Ingredients:
  • 2 pounds chopped kale leaves
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 tablespoons diced pimento peppers
  • 2 cloves garlic, minced
  • 1.25 cups half-and-half
  • 0.25 cup heavy whipping cream
  • 0.33333334326744 cup shredded Gruyere cheese
  • 0.5 cup freshly grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon Italian seasoning
  • 1 pinch cayenne pepper
  • 0.25 cup panko bread crumbs
Instructions:
  • 1. In a generously salted large pot of boiling water, blanch batches of kale for about 4 minutes until tender. Shock in an ice water bath, then drain using a colander. Spin in a salad spinner to remove excess water. Repeat with remaining batches.
  • Preheat your oven to 400°F (200°C).
  • In a large skillet over medium heat, melt butter until sizzling. Stir in onions and cook until tender, about 6 to 8 minutes. Toss in pimentos and garlic for 1 minute. Pour in half-and-half and cream, then bring to a gentle simmer.
  • Take the mixture off the heat and gently mix in Gruyere cheese, half of the Parmesan cheese, salt, pepper, Italian seasoning, and cayenne. Gently incorporate the kale. Put everything into a shallow baking dish and top with the rest of the Parmesan and panko.
  • Bake until beautifully golden, about 12-15 minutes in the preheated oven.
