Creamy asparagus pasta

Quick and creamy pasta with savory mushrooms and asparagus - ideal for busy nights.
Ingredients:
  • 375g dried pappardelle pasta
  • 2 bunches (about 480g) asparagus, ends trimmed
  • 20g (1 tbsp) butter
  • 3 garlic cloves, crushed
  • 300g button mushrooms, thickly sliced
  • 6 green shallots, trimmed, finely chopped
  • 125ml (1/2 cup) thickened cream
  • Salt & freshly ground black pepper
Instructions:
  • Prepare the pasta in a generously salted pot of boiling water according to the package instructions, cooking until just tender.
  • Next, gently add the asparagus to a pot of boiling salted water. Cook for 5-6 minutes until vibrant green and slightly crisp. Drain and cut into 2cm pieces.
  • In a large saucepan over medium heat, melt butter until foamy. Stir in garlic for 30 seconds until fragrant. Add mushrooms and green shallots, cook for 2 minutes until mushrooms soften. Pour in cream and asparagus, stir constantly for 2 minutes until slightly thickened. Season with salt and pepper to taste.
  • After draining the pasta, transfer it back to the pan. Add the asparagus sauce and gently toss to mix. Serve promptly.
