Creamy Avocado Tuna Melts

Avocado, tomato, tuna, and cheese on open-faced sandwiches for a delicious and simple lunch.
Ingredients:
  • 4 slices whole wheat bread
  • 2 cans (5 oz each) chunk light tuna in water, drained
  • 3 tablespoons Mountain High™ whole milk plain yoghurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 avocado, peeled, pitted and sliced
  • 1 medium vine-on tomato, thinly sliced
  • 1 cup shredded Swiss cheese (4 oz)
Instructions:
  • Position the oven rack 4 to 6 inches away from the broiler. Preheat the oven by setting it to broil.
  • Lightly toast whole wheat bread using a toaster. Arrange the toasted bread in a single layer on a cookie sheet lined with foil.
  • Combine tuna, yogurt, salt, garlic powder, and onion powder in a medium bowl.
  • Evenly layer avocado, tomato, and tuna mixture on each bread slice. Sprinkle each with a generous 1/4 cup of cheese.
  • Broil the sandwiches for 3 to 4 minutes until the cheese is perfectly melted.
