Ingredients:
  • 8 large Idaho® Gold Potatoes
  • 0.5 cup soft butter
  • 0.5 cup shredded Parmesan cheese
  • 1.5 cups buttermilk
  • 1 cup heavy cream, or more to taste
  • 1 bunch flat leaf parsley, roughly chopped
  • 1 teaspoon kosher salt
Instructions:
  • Halve the potatoes and submerge them in a large pan filled with cool water.
  • Bring to a gentle boil for 25-35 minutes, or until the potatoes are easily mashable.
  • Drain the water and stir in the remaining ingredients, allowing the parsley to gently infuse with the warm potatoes.
  • Mash the potatoes by hand or with a hand mixer and season with salt to taste.
