Crispy fried catfish fillets marinated in creamy buttermilk and coated in flavorful Old Bay cornmeal.
Ingredients:
  • 0.5 cup buttermilk
  • 0.5 cup water
  • salt and pepper, to taste
  • 1 pound catfish fillets, cut in strips
  • 1.5 cups fine cornmeal
  • 0.5 cup all-purpose flour
  • 1 teaspoon seafood seasoning, such as Old Bay™
  • 1 quart vegetable oil for deep frying
Instructions:
  • In a small bowl, whisk together buttermilk, water, salt, and pepper. Pour the mixture into a large flat pan. Place the fillets in the pan in a single layer, ensuring both sides are coated. Allow the fillets to marinate.
  • In a 2-gallon resealable plastic bag, mix together cornmeal, flour, and seafood seasoning. Add fillets to the bag a few at a time, and coat evenly by gently tumbling.
  • Preheat oil in a deep fryer to 365°F (185°C).
  • Fry fillets in hot oil until they reach a crisp and golden brown color, approximately 3 minutes. To ensure proper browning, fry in batches without overcrowding. Then, drain on paper towels.
