Try this speedy, flavorful cornmeal-spiced catfish for a delicious twist on a classic dish in under 30 minutes.
Ingredients:
  • 1.5 pounds catfish fillets
  • 0.5 cup yellow cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon celery seed
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 0.5 cup skim milk
  • cooking spray
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C), then line a baking sheet with aluminum foil and coat it with cooking spray.
  • Combine cornmeal, paprika, thyme, salt, celery seed, onion powder, garlic powder, and pepper in a shallow dish. Dip catfish fillets in milk, then coat with cornmeal mixture generously. Transfer to a greased baking sheet. Spritz the tops with cooking spray until moistened.
  • Bake in the preheated oven for about 15 minutes, or until the fish flakes easily with a fork.
