Spicy breaded catfish fillets with a crispy oven-fried coating.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1.5 pounds catfish fillets, cut into serving pieces
  • 1 cup cornmeal
  • 2 teaspoons Creole seasoning
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 0.5 teaspoon ground black pepper
  • 2 eggs, lightly beaten
  • 1 tablespoon hot pepper sauce or water
Instructions:
  • Preheat your oven to 425°F (220°C) and generously grease a 13x9 glass baking dish with oil.
  • After rinsing the catfish fillets, gently dry them. In a shallow bowl, mix cornmeal, creole seasoning, paprika, sugar, and black pepper. In a separate bowl, combine eggs with hot sauce or water. Dip fillets in the egg mixture, coat with cornmeal mix, then place in the baking pan.
  • Bake the catfish for 15 minutes, flipping once, until golden brown and fully cooked. Serve on a paper-towel lined plate with extra hot sauce.
