Creamy Cavatappi

Indulgent creamy cavatappi, a quick and easy weeknight winner with customizable Parmesan sauce.
Ingredients:
  • 8 ounces (1/2 pound) cavatappi pasta
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 3/4 cup heavy cream
  • 1/2 teaspoon kosher salt, plus more for the pasta water
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup (1.3 ounces) finely grated Parmesan cheese, plus more for garnish
  • 1 tablespoon fresh lemon juice
  • 1 cup frozen peas, optional
  • 1/4 cup to 1/2 cup reserved pasta cooking water
Instructions:
  • Prepare the pasta: Boil a large pot of salted water. Add the pasta when boiling and cook until just before al dente, as per package instructions.
  • Prepare the sauce: In a large skillet over medium heat, melt the butter. Add garlic and cook for about 30 seconds until fragrant. Slowly pour in the cream while stirring, then season with salt and pepper. Let it simmer, stirring occasionally, until slightly thickened for about 3 minutes. Gradually sprinkle and stir in the Parmesan, adding a handful at a time until melted. Stir in lemon juice and reduce heat to low until pasta is ready, stirring occasionally.
  • Drain the pasta, reserving 1/2 cup of pasta water, and thaw the peas by adding them to a colander before draining the pasta over them. The hot pasta will defrost the peas perfectly.
  • Combine pasta and peas with sauce: If your skillet is large enough, mix the pasta and peas into the sauce. If not, return them to the pasta pot and pour the sauce over. Stir in 1/4 cup of reserved pasta water and turn heat to medium. Continuously stir until the sauce is creamy and coats the noodles, about 3 to 5 minutes. If the sauce is too thick, add a splash of pasta water at a time, stirring in between. Season with salt and/or pepper to taste. Sprinkle with Parmesan cheese and serve hot. Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently in the microwave or stovetop, adding water or cream to loosen. Don't forget to leave a review if you enjoyed the recipe!
