Creamy Chicken and Tomatillo Verde Gemelli Pasta: Quick and Easy weeknight dinner option.
Ingredients:
  • 1 (16 ounce) package gemelli pasta
  • 1 (15 ounce) can white queso blanco cheese sauce (such as Rico's®)
  • 1 (12 ounce) jar tomatillo cooking sauce (such as Herdez®)
  • 1 pound cubed, cooked chicken
  • 0.25 cup grated Parmesan cheese, or to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. Add gemelli pasta and cook until al dente, stirring occasionally, about 8 to 10 minutes.
  • Simultaneously, mix cheese sauce and tomatillo cooking sauce in a medium saucepan over medium-high heat. Stir until smooth, then add chicken. Heat for 5 to 10 minutes until warmed through. Take off the heat.
  • After draining the pasta, transfer it back to the pot. Pour the sauce mixture over the pasta, stir well, and heat on medium for 3 to 5 minutes until heated through.
  • Garnish with freshly grated Parmesan cheese just before serving.
