Indulgent homemade chocolate ice cream for the whole family to enjoy!
Ingredients:
  • 600ml pure cream
  • 150.00g dark chocolate, chopped
  • 32.50 gm cocoa powder, sifted
  • 4 egg yolks
  • 107.50 gm caster sugar
  • 126.25 gm pure cream
  • 32.00 gm brown sugar
Instructions:
  • Combine cream and chocolate in a saucepan over gentle heat. Whisk in cocoa and stir for 5 minutes until chocolate melts (avoid boiling). Remove from heat. Whisk egg yolks and sugar in a heatproof bowl until blended. Gradually pour hot milk mixture over the egg yolk mixture while whisking continuously.
  • Place the mixture back in the saucepan over low heat. Stir continuously for 5 to 7 minutes until the custard thickens and coats the back of a metal spoon. Remember not to let it boil to prevent curdling. Let it cool, cover, and refrigerate overnight.
  • While you wait, prepare the Chocolate sauce by gently melting chocolate with cream and sugar in a saucepan over low heat. Stir continuously for 5 minutes until the mixture is smooth. Allow it to cool, cover, and refrigerate overnight.
  • Prepare custard in ice-cream maker according to the manufacturer’s instructions, approximately 20 minutes. Transfer mixture to an airtight container or loaf pan and freeze.
  • Warm the chocolate sauce in a small saucepan over low heat. Drizzle the warm chocolate sauce over scoops of ice cream.
