Creamy Conchiglie Pasta Salad

Delicious conchiglie pasta salad with creamy mayo dressing, perfect for any gathering.
Ingredients:
  • 8 ounces conchiglie pasta (small shells)
  • 0.5 cup minced celery
  • 0.25 cup diced red bell pepper
  • 0.25 cup diced green bell pepper
  • 0.25 cup chopped sweet pickles
  • 2 stalks green onion, thinly sliced
  • 1 tablespoon red wine vinegar
  • 0.25 teaspoon seasoning salt, or to taste
  • 0.25 teaspoon ground black pepper
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 0.5 cup cubed sharp Cheddar cheese
Instructions:
  • 1. Boil a large pot of salted water until bubbling. Cook shells until al dente, stirring occasionally, for about 8 to 9 minutes. Drain in a colander, rinse quickly with cold water, and drain again.
  • In a medium bowl, mix together celery, red and green bell pepper, pickles, green onion, vinegar, 1/4 teaspoon seasoning salt, and pepper until well combined. Stir in mayonnaise and sour cream until fully blended. Adjust seasoning with more salt if desired. Gently fold in the pasta.
  • Chill in the refrigerator for at least 4 hours or preferably overnight.
  • Take the dish out of the refrigerator, gently mix in the Cheddar cheese, and enjoy.
