Ingredients:
  • 250g penne rigate
  • 1 brown onion, diced finely
  • Oil, for frying
  • 15 slices salami, cut into 1cm strips
  • 1 red capsicum, sliced
  • 255.00 gm chicken style liquid stock
  • 22.20 gm tomato paste
  • 20g semi-dried tomatoes
  • Parmesan, shaved, to serve
Instructions:
  • In a large saucepan, bring water to a boil. Add pasta and cook until perfectly al dente. Drain the pasta.
  • In a large frying pan, sauté the garlic, onion, and salami in a splash of oil until the salami starts to release its flavorful fat, creating a delicious aroma.
  • Saute the capsicum until softened, then stir in the chicken stock, semi-dried tomatoes, and tomato paste. Let it simmer for 20 minutes.
  • Just before serving, gently pour in the cream and heat it up. Season with salt and pepper to your liking. Simmer the sauce until it slightly thickens. Combine the cooked pasta with the sauce in the pan and mix until well coated.
  • Garnish with freshly grated parmesan.
