Creamy garlic mussels with chips

Indulge in garlic mussels with crispy oven fries for a satisfying family dinner.
Ingredients:
  • 1/2 x 1kg pkt frozen Brand Straight Cut Potato Chips
  • 18.20 gm Brand Pure Olive Oil
  • 4 shallots, finely chopped
  • 3 Australian garlic cloves, crushed
  • 300ml thickened light cooking cream
  • 1kg Australian Blue Lip Mussels, scrubbed, debearded
  • 62.50 ml chopped chives
  • 40.00 ml chopped flat-leaf parsley
  • 160g pkt Brand Mesclun Blend Salad
Instructions:
  • Follow the instructions on the packet to bake the chips.
  • While the oil is heating in a large saucepan over medium heat, sauté the shallot and garlic for 5 minutes, or until soft. Pour in the cream and bring to a boil.
  • Cook mussels covered for 5 mins until they open. Transfer mussels to a dish with a slotted spoon. Simmer sauce for 5 mins until thickened. Stir in herbs, season with pepper. Return mussels to sauce, heat through for 1 min. Serve with chips and salad leaves.
