Creamy bacon garlic mushroom sauce is versatile and delicious over any savory dish.
Ingredients:
  • 2 slices bacon, cut into 1/2-inch pieces
  • 2 tablespoons unsalted butter
  • 0.5 cup minced onion
  • 3 cloves garlic, minced
  • 8 ounces baby bella mushrooms, sliced
  • 0.125 teaspoon ground nutmeg
  • freshly ground black pepper to taste
  • 3 tablespoons chicken broth
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon soy sauce
  • 0.5 tablespoon cornstarch
  • 0.5 cup heavy cream
  • 2 teaspoons chopped fresh parsley
Instructions:
  • In a large skillet over medium-high heat, cook the bacon until crisp, turning occasionally, for 2 to 3 minutes. Drain on paper towels and set aside.
  • Keep 1 tablespoon of bacon grease in the skillet. Melt butter over medium heat. Saute onions until soft and translucent for 2 to 3 minutes. Add garlic and cook until fragrant for about 30 seconds. Coat mushrooms with the butter-onion-garlic mixture and cook until browned, approximately 4 to 5 minutes. Season with nutmeg and pepper.
  • In a bowl, whisk together chicken broth, balsamic vinegar, soy sauce, and cornstarch until smooth. Add to mushroom mixture, along with heavy cream and reserved bacon. Simmer until sauce is thick and bubbly, about 2 minutes.
  • Season to taste and serve promptly, sprinkled with fresh parsley.
