Bacon-wrapped venison tenderloin with creamy mushroom sauce.
Ingredients:
  • 6 thick slices bacon
  • 2 (3/4 pound) venison tenderloin roasts
  • 2 teaspoons olive oil, divided
  • 0.25 teaspoon onion powder, divided
  • kosher salt and ground black pepper to taste
  • 2 tablespoons butter
  • 1 (8 ounce) package sliced cremini mushrooms
  • 2 cloves garlic, chopped
  • 1 tablespoon chopped green onion, or more to taste
  • 0.5 cup heavy whipping cream, or more to taste
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and lay out the bacon slices on a slotted baking pan.
  • Bake the bacon in a preheated oven until slightly cooked but still flexible, for about 6 to 8 minutes.
  • Coat venison tenderloins with olive oil and generously season with onion powder, salt, and black pepper. Wrap them snugly together in crispy strips of bacon and arrange in a roasting pan.
  • Roast in the preheated oven until the bacon is golden and an instant-read meat thermometer shows at least 145 degrees F (65 degrees C) when inserted into the thickest part of the tenderloin, approximately 1 hour.
  • 1. Melt butter in a saucepan over medium heat. Saute mushrooms and garlic until tender, about 8 to 10 minutes. Add green onions, then pour in cream, stirring until warmed. Serve over tenderloins.
