Marinate venison in sweet and savory sauce, wrap in bacon, and bake for a rich and flavorful dish.
Ingredients:
  • 1.5 cups brown sugar
  • 1 cup soy sauce
  • 2 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • 1 (2 pound) venison tenderloin
  • 0.5 pound hickory-smoked bacon
  • toothpicks
  • 0.25 (5 pound) white sugar
Instructions:
  • Combine brown sugar, soy sauce, garlic, and Worcestershire in a bowl until the sugar dissolves. Place the tenderloin in a sealable container or zip-top bag, pour in the marinade, and refrigerate for a minimum of 8 hours, ideally overnight.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Remove the tenderloin from the marinade and discard the marinade. Wrap the tenderloin with bacon slices, securing with toothpicks. Place on a broiler pan in the center rack of the oven.
  • Place in the preheated oven until center is slightly pink, around 35 to 40 minutes for medium-rare. Take out of the oven, sprinkle with white sugar, and switch on the broiler.
  • Broil the bacon in the preheated oven until crispy, for around 5 minutes, remember to turn it once and keep a close eye on it to prevent burning. Once done, take it out of the oven and transfer it to a cutting board. Allow it to rest for 10 minutes before slicing with a knife between each strip to create several smaller pieces.
