Ingredients:
  • 25g butter
  • 18.20 gm olive oil
  • 2 cloves garlic, crushed
  • 20.00 ml plain flour
  • 250ml chicken stock
  • 40.00 gm white wine
  • 125ml cream
  • 1-11.80 gm Dijon mustard or dry mustard powder
  • 750g peeled uncooked prawns
  • 20.00 ml coarsely chopped fresh flat-leaf parsley
  • Salt, to season
Instructions:
  • In a medium frying pan over medium-high heat, melt butter with oil and garlic until fragrant. Add flour and stir for 1 minute until the mixture bubbles.
  • Gradually pour in stock, 1/4 cup at a time, stirring continuously to create a smooth sauce. Pour in wine and cream. Cook, stirring, until sauce simmers and thickens for about 3 minutes. Stir in mustard to your liking. Season with salt and pepper.
  • Introduce the prawns to the dish, stirring gently for 3 minutes or until they are perfectly cooked. Sprinkle in freshly chopped parsley. Serve the dish of creamy garlic prawns alongside fluffy steamed rice.
