Effortlessly baked seafood and risoni packet, ready in 40 minutes - a quick and delicious weeknight meal bursting with prawns.
Ingredients:
  • 150g (2/3 cup) dried risoni pasta
  • 250ml (1 cup) pouring cream
  • 2 tsp Chicken Stock Powder
  • 5.90 gm Dijon mustard
  • 600g green prawns, peeled, deveined, tails intact
  • 150g (1 cup) frozen peas, thawed (see tip)
  • Fresh continental parsley leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan forced. Boil risoni in a saucepan for 4 minutes until partially cooked, then drain.
  • In a small bowl, mix together the cream, stock powder, garlic, and mustard.
  • Divide the risoni evenly among the four 30cm square sheets of foil. Pull the edges of the foil up slightly. Top with prawns and peas, then pour over the cream mixture.
  • Enclose the filling in the foil and paper, ensuring it is tightly sealed. Bake on a large tray for 15 minutes or until prawns change color. Serve by sprinkling with parsley.
