Quick and creamy vegetarian pasta with Gorgonzola, spinach, ready in just 20 minutes.
Ingredients:
  • 1 (16 ounce) package fusilli pasta
  • 1.5 tablespoons butter
  • 2 shallots, minced
  • 1 cup heavy whipping cream
  • 4 cups fresh spinach
  • 0.5 cup Gorgonzola cheese
Instructions:
  • 1. Bring a large pot of lightly salted water to a boil. Add fusilli and cook for about 12 minutes, stirring occasionally, until al dente.
  • Begin by melting butter in a skillet over medium heat for the shallots to soften and turn translucent, around 3 to 5 minutes. Pour in cream and heat for an additional 3 to 5 minutes. Next, add spinach and crumbled Gorgonzola cheese before seasoning with salt and pepper. Cook until the spinach wilts and the sauce thickens, about 4 minutes.
  • After draining the fusilli, coat it evenly with the sauce and serve promptly.
